Gluten Free Almond Cookies
Soft, chewy, crispy on the outside gluten-free almond cookies

- 1 cup almond meal
- 1/3 cup sugar/xylitol
- 1/2 tsp vanilla paste
- 1 egg white slightly beaten
- almond flakes
- caster sugar optional
Preheat oven to 180 °C. Line baking sheets with parchment paper.
Combine together all the ingredients, except almond flakes, in a big bowl. In a separate bowl place almond flakes.
Take approximately tablespoon of the dough and roll with slightly wet hands into a round bow. Roll the cookie ball into almond flakes, after that, flatten lightly to create round cookie shape. Place on a baking sheet.
Repeat with the remaining cookie dough, spacing the cookies about 5 centimeters apart.
Bake for 12-15 minutes. Remove from oven then transferring to a wire rack.
Sprinkle with caster sugar if needed.
