Gluten Free Almond Cookies

Soft, chewy, crispy on the outside gluten-free almond cookies

  • no equipment required


  • 1 cup almond meal
  • 1/3 cup sugar/xylitol
  • 1/2 tsp vanilla paste
  • 1 egg white slightly beaten
  • almond flakes
  • caster sugar optional


  • Preheat oven to 180 °C. Line baking sheets with parchment paper.
  • Combine together all the ingredients, except almond flakes, in a big bowl. In a separate bowl place almond flakes.
  • Take approximately tablespoon of the dough and roll with slightly wet hands into a round bow. Roll the cookie ball into almond flakes, after that, flatten lightly to create round cookie shape. Place on a baking sheet.
  • Repeat with the remaining cookie dough, spacing the cookies about 5 centimeters apart.
  • Bake for 12-15 minutes. Remove from oven then transferring to a wire rack.
  • Sprinkle with caster sugar if needed.
