Coffee Cake Ingredients

These coffee cake with cappuccino frosting is super easy to make. It takes about 30 minutes to make and it’s packed full of flavour.

For the coffee sponge

  • whole milk
  • instant coffee granules
  • unsalted butter, softened
  • brown sugar
  • granulated sugar
  • eggs
  • plain flour
  • almond flour
  • baking powder
  • salt

For the cappuccino frosting

  • heavy cream
  • cappuccino powder
  • instant coffee
  • icing sugar
  • chocolate shavings

How To Make Coffee Cake With Cappuccino Frosting

Step 1 Prepare The Batter

In a small saucepan, heat milk and instant coffee on a medium low heat until coffee is completely dissolved. Stir constantly to speed up the process. Set asied to cool until at a room temperature. In a large bowl, cream together softened butter, brown sugar and granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In a separate bowl, whisk together flour, almond flour, baking powder and salt. Alternately add the dry ingredients and coffee milk to the butter mixture, stirring well after each addition, until smooth.

Step 2 Bake

Once the batter is smooth, pour into the prepared baking pan and smooth out the top. Bake for 25-30 minutes at 350°F (180°C) or until a toothpick inserted into the middle comes out clean. Remove from the oven and cool completely.

Step 3 Prepare The Cappuccino Frosting

In a large bowl, beat heavy cream with an electric mixer on a medium speed until soft peaks. Add in icing sugar, cappuccino powder and instant coffee and beat well until smooth and hold a stiff peak.

Step 4 Assemble The Coffee Cake

Spoon the cappuccino frosting on the cooled cake. Using a spatula, spread it out into an even layer. Sprinkle with chocolate shavings, slice and serve.

How To Store

Store in an airtight container in a cool dry place or in the fridge for up to 4 days.

  • 1/2 cup whole milk 120 g
  • 3 1/2 tbsp instant coffee granules
  • 1 1/4 stick unsalted butter 140 g
  • 1/2 cup brown sugar 100 g
  • 1/4 cup + 2 tbsp granulated sugar 75 g
  • 3 eggs
  • 1 1/2 cup flour 180 g
  • 1/2 cup + 1 tbsp almond meal 60 g
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt

For cappuccino Frosting

  • 1 1/3 cup 30 % heavy cream 300 g
  • 2 1/2 tbsp cappuccino powder
  • 2 tsp instant coffee granules
  • 1 cup icing sugar 120 g
  • chocolate shavings to decorate
