Low calories, low fat, gluten free eggplant mini pizzas bites. It’s a healthy alternative to the traditional version, using sliced eggplant as the pizza crust. You can of course modify this recipe by adding your favorite toppings.

Mini Eggplant Pizzas Ingredients

Super easy and delicious recipe with under 10 ingredients!

Eggplant It is the base of your pizza. You don’t need to peel it off. I recommend slicing it into circles, rather than lenghtwise. You also should let it “sweet“ by salting it to get rid of excess water.

Sauce Use any kind you like.

Cheese I recomment using mozarella shredded cheese, as it has lower moisture content than fresh mozarella.

Cherry Tomatoes they are small and fit perfectly on eggplant pizza.

How To Make Eggplant Pizza

Step 1 Remove liquid from eggplant

I don’t reccomend skipping this step. It gives tastier and softer texture. To start, wash and slice eggplant into 2 cm ( 3/4 inches ) thick slices. Place eggplant slices on kitchen towel. Sprinkle salt on both sides. Let sit for 20 minnutes, then dry of the excess liquid from the eggplant.

Step 2 Preheat the oven

Preheat the oven to 195 ° C (383 F ) and line a baking sheet with parchment paper. Place the eggplant slices over the sheet and dress with olive oil, salt and pepper. Bake for 20-25 minutes.

Step 3 Add the toppings

Remove the eggplant from the oven and add the tomato sauce on each slice. Top with grated mozarella cheese, slices of olives and cherry tomatoes.

Step 4 Bake

Return to the oven for another 5 – 7minutes untill cheese is fully melted.

How To Store Eggplant Pizzas

You can store eggplant pizza in an airtight container in the fridge for up to 5 days. Then just place in preheated oven to warm up for 5 minutes at 195 °C (383 F ).
