
Rich, refreshing, simple to make lemon bars. They are made just with 6 ingredients and lots of lemon flavor! Crunchy shortbread crust, creamt lemon filling and a sprinkle of powdered sugar on the top. Perfect treat for all lemon lovers!
Perfectly balanced leamon filling to a shortbread crust. These sunny lemon squares comes together so easly. You will need just like 5 minutes to prepare all. The rest is just baking time and you don’t even need electric mixer!
The most important point is that you should not over bake these lemon bars. 20 minutes in the oven should be enough. Lemon filling should be still very soft. It will continue to thicken as it cools.

Shortbread Crust
Here is what you neeed:
- 100 g wheat flour ( 3/4 cup )
- 40 g caster sugar ( 1/3 cup )
- 55 g butter
Place all ingredients fo the crust in a big bowl. Use a for to cut the butter into the flour. You can also combine these ingredients in a food processor if you like. Pres the crust into 20 x 20 cm baking pan and put it in the oven for 12-15 minutes. While it cools, prepare lemon filling.
Lemon Filling
Here is what you need:
- 2 eggs
- 150 g sugar ( 3/4 cup )
- 130 ml lemon juice ( 1/2 cup )
- 35 g wheat flour ( 1/4 cup )
To make the filling, combine all the ingredients in a large bowl until smooth. When the crust is done, spread lemon filling over the crust and bake for another 20 minutes. Let the bars cool completely. Slice into squares and sprinkle with powdered sugar.

- Let the bars cool completely. Slice into squares and sprinkle with powdered sugar.
