Healthy, low carb zucchini pizza made of grated zucchini and a handful of simple ingredients. One of my favorite healthy dinner ideas. You can top it with your favorite pizza toppings.

We all love pizza, this one is a great way to sneak in some vegetables into your diet! And don’t worry, it’s impossible to recognise what it is made of for somebody who doesn’t know the ingredients.

How To Make Zucchini Pizza

Crust ingredients:

  • zucchini
  • eggs
  • salt
  • pepper
  • dried basil
  • mozarella or cheddar cheese
  • flour

To start, cut off zucchini ends. Preheat the oven to 210 ° C. Place kitchen towel onto the bottom of a big bowl. Shred the zucchini into a bowl using a box grater. Bring the kitchen towel up around the zucchini, and gently squeeze to release excess moisture then place zucchini into a bowl. Place eggs into a small bow. Using fork beat just until combied. Pour over zucchini then stir to combine. Add spices, cheese, flour and combine well.

Place on baking tray lined with parchment paper. Spread into circual shape and bake in the oven for 20 minutes or until golden brown. Take out from the oven and let it cool for about five minutes. Top with your favorite pizza topping and bake for another 10 minutes.

  • 1/2 cup mozarella ore cheddar cheese
  • 5 tbsp plain flour

Toppings

  • 5 tbsp pizza sauce
  • mozarella or cheddar cheese
  • tomatoe
  • 100 g tuna
