Strawberry yogurt bars are made with fresh strawberries, butter crumb topping, layer of yogurt and oat shortbread crust. These delicious bars makes perfrect breakfast or afternoon snack. They are great to make ahead and grabbing when you are on the go.

For this recipe, I used strawberries. However you can substitute them with any other fruits of your choice. It will come out as delicious as these strawberry yogurt bars. Here is a list of fruits, that i like to make bars with :

  • blueberries
  • raspberries
  • peaches
  • cherries

Tips

Cool completely and refrigerate before serving. These strawberry yogurt bars needs time to set up. They might fall apart if you don’t wait.

Line the pan with perchmant paper. This will help you to remover bars easly from the pan.

How To Make Strawberry Yogurt Bars

Crust and crumble topping

The base and the topping are made of the shortbread crust. In a large bowl, whisk together flour, oats, sugar, baking paper and salt. Fold in butter at a room temperature and rub it into flour mixture untile it resemble crumbles. Reserve 1/4 of the mixture for the topping. Fold the remaining mixture into 20 cm x 20 cm baking pan lined with parchment paper. Press it down and flatten to cover bottom of the pan. Set aside.

Yogurt Layer

Pour yogurt into a bowl. Fold in flour and sugar then stir until combined. Pour over shortbread crust. Slice strawberries and place them on the yogurt mixture. Crumble the remaining oat mixture over strawberries.

Bake

Bake for 40-45 minutes, until the crumble topping is golden. Let the bars cool completely at a room temperature. After that, refrigerate for about 2 hours. Once cooled, remover the bars from the pan by lifting up on the parchment paper. Cut and enjoy!

How To Store

Store yogurt bars in an airtight conteiner in the fridge for up to one week or in the freezer for up to one month.

Materials

Shortbread Crust & Crumble Topping

  • 1 cup all-purpose flour
  • 1 cup oats
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/3 tsp salt
  • 150 g butter room temperature

Yogurt Layer

  • 450 g natural yogurt
  • 1/3 cup flour
  • 1/4 cup sugar
  • 300 g strawberries

Instructions

  • In a large bowl, whisk together flour, oats, sugar, baking paper and salt. Fold in butter at a room temperature and rub it into flour mixture untile it resemble crumbles.
  • Reserve 1/4 of the mixture for the topping. Fold the remaining mixture into 20 cm x 20 cm baking pan lined with parchment paper.
  • Press it down and flatten to cover bottom of the pan. Set aside.
  • Pour yogurt into a bowl. Fold in flour and sugar then stir until combined. Pour over shortbread crust.

  • Bake in preheated oven over 180 ° C for 40-45 minutes, until the crumble topping is golden. Let the bars cool completely at a room temperature.
  • Refrigerate for about 2 hours. Once cooled, remover the bars from the pan by lifting up on the parchment paper. Cut and enjoy!
