An easy broccoli cream soup ready in 30 minutes! One of the easiest dishes that you can prepare. It is filled with bone broth and planty of vegetables.

The best part about this soup is that it can be served chilled or warm. Depending on your preference, vegetable or chicken brot can be used in this recipe.

Broccoli Cream Soup Ingredients

  • 1 medium onion, diced
  • 2 carrots, diced
  • 1 cup frozen spinach, defrosted
  • 2 celery stalks, dieced
  • 1 bunch fresh parsley, chopped
  • 3 cups vegetable broth
  • 500 g broccoli
  • 30 g cheese, grated
  • 5 tbsp natural yogurt

How To Make Broccoli Cream Soup

This soup comes together just in few simple steps. To start, add onion, carrots, defrosted spinach and selery into soup pot then cover with the vegetable broth. Bring to a boil, then cook over low heat for 20 minutes until vegetables soften. Add broccoli and cook for another 5 minutes. After that, add the cheese and parsley then using hand mixer blend everything until smooth and creamy. Add yogurt and stir until incorporate. Season with salt and pepper if needed.
