This yeast star with poppy seeds is a sweet bread that is so impressive and can be filled with all sorts of flavors. My favorite one is the one that I’m sharing with you, but you can fill it with some nutella or jam as well. The choice belong to you! It’s a great recipe to celebrate holiday or an everyday treat with a cup of milk.

This star bread is quite simple to make. The recipe is simillar to cinnamon rolls. You should bake it until golden brown and decorate with icing sugar or just sprinkle with caster sugar.

How To Make Yeast Star With Poppy Seeds

  • Make The Dought. To start you will need to crumble frest yeast into a bowl. Add flour, sugar, milk then mixt to combine and set aside to raise for at least 10 minutes.
  • Mix and knead. The rest of the dought ingredients place into a bowl. Add in raisen yeast mixture and knead using hands for about 10 minutes. Cover with a towel and let raise in a warm place for 1-1,5 hour until doubled in size.
  • Shape. Transfer to a very well floured surfance. Knead for 5 minutes then divide into four equal pieces. Shape each into a bow then roll out on a well floured surfance into 25 cm circle.
  • Layer. Transfer one dough circle onto baking sheet lined with parchment paper. Spread 1/3 of poppy seed filling. Repeat with the next dought circle placing it on the top of the filling. Repeat leaving the top circle bare.
  • Cut. Place 4-7 cm cup or plate in the center of the circle as a quide. Using knife cut into equal 16 strips through all the layers.
  • Twist. Using two hands twist two strips away from each other two or three times. Pinch the strips together verry well. Repeat with the rest strips to create star shape.
  • Raise. Cover with a kitchen towel and let rest for 10 to 30 minutes to raise.
  • Bake. Brush the star with a slightly beaten egg. Bake in preheated oven over 180°C for 15-20 minutes until golden brown. Cool completely.
  • Glaze. Place caster sugar into a bow. Pour water then stir to combine. Use tablespoon to drizzle the glaze over the star.

Notes

  • It is so important to knead the dough long enough to activate gluten. However, be aware not to over – knead your dough! Usually it takes about 10 minutes to knead it.
  • You know that the dough is ready when you press it with your finger and it doesn’t spring back.
  • Yeast cake usually starts to dry after one day. To prevend this, store it in an airtight container in the refrigerator.

Homemade Poppy Seeds Filling

You will need:

  • 200 g poppy seeds
  • 250 ml milk
  • 2 tablespoons butter
  • 4 tablespoons honey
  • nuts

Dry poppy seeds fold into boiling milk. Heat up, stirring the whole time. If the milk absorbs the milk too quickly, add a little more. Add the remaining ingredients, stirring constantly. Remove from heat and set aside to cool completely.

Materials

Yeast Mixture

  • 20 g fresh yeast
  • 1 tbsp flour
  • 1 tbsp sugar
  • 70 ml lukewarm milk

Dough

  • 500 g flour
  • 80 g sugar
  • 2 eggs
  • 130 ml lukewarm milk
  • 60 g melted butter

Filling

  • 500 g ready to bake poppy seeds filling

Instructions

  • Crumble the fresh yeast into the bowl. Add in flour, sugar and lukewarm milk. Stir to combine. Cover with a towel and let raise in a warm place for 15 minutes.
  • Flour sift through the sieve. Add in the rest of the dough ingredients and also raisen yeast mixture.
  • Knead for about 10 minutes using hands. Cover with a towel and let raise in a warm place for 1-1,5 hour.
  • After the dough has doubled in size, transfer to a very well floured surfance. Knead for another 5 minutes. Divid the dough into 4 equal pieces.
  • Shape each piece into a bow then roll out into 25 cm circle. Transfer one dough circle onto baking sheet lined with parchment paper. Spread 1/3 of poppy seed filling. Repeat with the next dought circle placing it on the top of the filling. Repeat leaving the top circle bare.
