Soft, chewy, crispy on the outside gluten-free almond cookies. The recipe is easy to make and you need only five ingredients to prepare them.

How To Make Gluten Free Almond Cookies

Step 1 Make the dough

To start, place egg white into a small bowl. Using a fork, slightly beat the egg just until blended. In a separate small bowl place almond flakes. In a big bowl combine all the ingredients, except almond flakes.

Step 2 Shape cookies

Take approximately tablespoon of the dough and roll with slightly wet hands into a round bow. Roll the cookie ball into almond flakes, after that, flatten lightly to create round cookie shape.

Step 3 Bake

Place on a baking sheet. Repeat with the remaining cookie dough, spacing the cookies about 2 inches apart. Bake for 12-15 minutes. Remove from oven then transferring to a wire rack. Sprinkle with caster sugar if needed.

Tips

  • Store cookies in an airtight container up for 3 days
  • You may prepare cookie dough, cover it up and store in the fridge up to 3 days. Take it out of the fridge about 20 minutes before baking.
  • Baked cookies you may store in an airtingt freezer bag up to 2 months

  • 1/3 cup sugar/xylitol
  • 1/2 tsp vanilla paste
  • 1 egg white slightly beaten
  • almond flakes
  • caster sugar optional

Instructions

  • Preheat oven to 180 °C. Line baking sheets with parchment paper.
  • Combine together all the ingredients, except almond flakes, in a big bowl. In a separate bowl place almond flakes.
  • Take approximately tablespoon of the dough and roll with slightly wet hands into a round bow. Roll the cookie ball into almond flakes, after that, flatten lightly to create round cookie shape. Place on a baking sheet.
