The best snack for all coffee lovers – cookies in the shape of coffee bean full of coffee flavor! They are much easier to prepare than how they seems to be. Just follow my steps below and they will come out perfect.

To prepare these cookies you don’t need any special equipment. You only need whisk and toothpick, that’s all! How amazing is that ?

How To Make Coffee Bean Cookies

To start, dissolve coffee in a hot water. Then set aside to cool completely. In a big bowl, cream soft butter with icing sugar. Fold in egg yolk, then stir to combine. Then pour completely cooled coffee and stir again until combined. Sift in plain flour and cocoa powder. After that, stir until well combined. The dough should be dry and intense in brown colour. Place in the fridge for at least 30 minutes. You can keep it in the fridge up to one week. Take it out of the fridge and about one tbsp of the dough shape into an oval. Place onto baking tray lined with parchment paper. Repeat with the rest of the dough. Using a toothpick or thin knife, bisect the cookie half way down. Repeat with the rest of cookies.  Place the baking tray in the fridge for 15 minutes. Bake for 10-12 minutes. Remove from the oven and let sit on the pan until cooled completely

  • 2 tbsp hot water
  • 1 tbsp instant coffee
  • 60 g butter
  • 4 tbsp powdered sugar
  • 1 egg yolk
  • 120 g plain flour 1 cup
  • 1 tbsp cocoa

Instructions

  • Coffee dissolve in a hot water. Set aside until needed.
  • Soft butter place in a bowl. Sift in caster sugar. Using whisk, stir to combine. Fold in egg yolk, then stir again to combine.
  • Pour cooled coffee then stir until combined. Sift in plain flour and cocoa powder. After that, stir until well combined. The dough should be dry and intense in brown colour.
  • Place in the fridge for 30 minutes. About one tbsp of the dough shape into an oval. Place onto baking tray lined with parchment paper. Repeat with the rest of the dough.
  • Using a toothpick or thin knife, bisect the cookie half way down. Repeat with the rest of cookies.  Place the baking tray in the fridge for 15 minutes.
  • Preheat the oven to 180 ° C. Bake for 10-12 minutes. Remove from the oven and let sit on the pan until cooled completely.
