Classic, fluffy, soft, home-style curd cheese sweet rolls. They are perfect as a breakfast or snack at any time. You can also sprinkle them with some caster sugar or top with vanilla glaze.

These white cheese sweet rolls are my favorite to prepare on Saturday morning. Usually i am too busy over the week so that is the perfect time to make some of delicious treats for upcoming week. You can store them in a container up to few days.

How To Make Classic Yest Dough

To make yest dough you need few simple ingredients, which you can find on the list below. The first step is to sift flour through the sieve into a big bowl. Then add in sugar and instant yest. Stir very well, so you will not get any problems after adding wet ingredients. Add in the rest of the ingredients and knead using hands for few minutes until all the ingredients comes together. Sprinkle with flour, so the dough will not get stuck to the sides of the bow. Cover with a kitchen towel and let raise in a warm place for 1-1,5 hour. It is very important to place the bowl in a warm place rather than cold. Dough should double in size and in a warm place it will do it faster and you will not have to wait longer.

Curd Cheese Filling

To prepare filling you need electric mixer. Soft butter, sugar and egg yolk beat until smooth. Add in cheese and cream again until light and fluffy mixture. You can taste the mixture and see if it needs more sugar. You can add a bit more if needed.

Materials

Dough

  • 250 g plain flour
  • 50 g sugar
  • 7 g instant yeast
  • 90 ml lukewarm milk
  • 20 g melted butter
  • 1 whole egg
  • 1 egg yolk

Filling

  • 30 g soft butter
  • 30 g sugar
  • 1 egg yolk
  • 150 g quark cheese

Instructions

  • Flour sift through the sieve. Add in sugar and yeast then stir to combine. Add in the rest of dough ingredients.
  • Knead for about 5 minutes using hands. Sprinkle with flour, cover with a towel and let raise in a warm place for at least 1 hour.
  • Soft butter, sugar and egg yolk place in a bowl. Using electric mixer cream until smooth. Add in cheese and cream again until light and fluffy mixture.
  • After dough has doubled in size, transfer it onto floured pastry mat and roll out into rectangle
  • Use spoon to spread the filing over the dough. Fold one side of the dough to cover about half of the cheese filling. Brush the other side of dough with egg white. Fold to cover almost the whole of other folded side.
  • Cut into 3-4 cm sections. Place on a baking tray lined with baking paper. Brush the dough with egg white.
  • Bake in preheated oven at 180 ° C for 12-15 minutes or until lightly brown.
