Christmas Gingerbread Cookies

Like most of us, i love Christmas time and Christmas cooking. My favourites to prepare are cookies and cakes. I absolutely adore the smell in the whole house while baking. It makes me remember my childhood and i feel safe and just happy. I enjoy every step and moment of preparing dishes for Christmas dinner.

How To Make Gingerbread Cookies

To start, place honey in a sauce pan. Add in Butter then heat it up on a low heat until butter is melted. Set aside to cool. Flour, caster sugar, baking powder, baking soda and cocoa sift together into a large bow, whisk to combine. After that, add in salt and gingerbread spice, stir to combine. Pour cooled honey mixture into dry ingredients. Add in egg, using a spoon stir to combine then knead using hands. After that, roll out dough on a floured pastry mat. Use cookie cutters to cut cookies into desired shapes. Place on baking tray lined with baking paper. Bake 8 minutes in preheated oven at 180° C . I recommend watching cookies while baking. Time of baking depends on size of cookies, so if your cookies are smaller, 6 minutes will be enough. Let it cool completely then pipe frosting on and decorate with decorative candies.

Materials

  • 125 g honey
  • 85 g butter
  • 350 g wheat flour
  • 70 g caster sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp cocoa
  • tsp salt
  • 1 ½ tsp gingerbread spice
  • 1 egg

Icing

  • 150 g caster sugar
  • 3 tbsp water

Instructions

  • Honey place in a sauce pan. Add in Butter. Heat it up on a low heat until butter is melted. Set aside to cool.
  • Flour, caster sugar, baking powder, baking soda and cocoa sift together into a large bow, whisk to combine. Add in salt and gingerbread spice, stir to combine.
  • Pour cooled honey mixture into dry ingredients. Add in egg, using a spoon stir to combine then knead using hands.
  • Roll out dough on a floured pastry mat. Use cookie cutters to cut cookies into desired shapes. Place on baking tray lined with baking paper. Bake 8 minutes in preheated oven at 180° C ( time depends on cookies size). Let it cool.
  • Caster Sugar sift through the sieve. Add in water, stir to combine. Transfer to a piping bag.
  • Pipe frosting on cookies and decorate with decorative candies.
