Easy, no bake, delicious peach cheesecake perfect as a summer dessert. Ready just in less than one hour with only few ingredients.

I love cheesecakes, so i thought it would be a great combination with my favorite fruits- peaches. I made this cake with agar-agar. However you can use gelatin instead. You should only be careful and follow instruction on the packet of agar-agar or gelatin, otherwise this cake will not work.

What Is Agar-Agar

Agar-Agar is vegetarian substitute for gelatin, it’s made of seaweed. It has no color, no taste and no odor. Typically it has to be boiled or cooked in liquid for a few minutes. After that, it can be poured into desired dish, where it can set at a room temperature. You can buy it from healthy food stores or Asian markets. And if you can not find it in any of those shops, just buy it online.

How To Make Peach Cheesecake

First, you should start with blending cookies in a food processor. Then add in melted butter and process again to combine. Fold the mass into spring form and spread evenly over the bottom. Cool in the fridge while preparing the filling. To make the filling of the cake, you should start with cooking peaches with sugar for about 30 minutes. Don’t forget to stir it from time to time, otherwise it will get stuck to the bottom of your pot. Take if off the heat, then using hand mixer blend until smooth consistency. Put it back on the heat and pour water. Stir to combine, then let cook for about 2 minutes. Add in agar-agar powder, stir and let cook for another 2 minutes or follow the instruction on your packet of agar-agar. Take if off the heat and divide into two bowls. Whipping Cream beat with powdered sugar until stiff. In another large bowl, whip the cream cheese until soft. Pour milk mixture over cream cheese, whip until well combined. Fold the whipped heavy cream into the cream cheese mixture. Using spatula, gently stir to combine. Pour half of the cream mixture into the prepared pan and smooth it over. Spoon the half of peach jam over the cheese mixture and spread it around evenly. Pour the rest of the cheese mixture over the jam then spoon the rest of the peach jam on the top. Spread it evenly.

  • 135 g crackers
  • 4 tbsp butter
  • 4 peaches
  • ½ cup sugar
  • cup water
  • 4 tbsp agar-agar
  • 200 ml whipping cream 30 %
  • 5 tbsp powdered sugar
  • 50 ml milk
  • 250 g cream cheese

Instructions

  • Butter melt in a sauce pan over low heat or in the microwave. Cookies place in a food processor. Blend until crushed completely. Transfer to a bowl and add melted butter. Stir to combine
  • Line the bottom and sides of a 20 cm spring form pan. Put the mass into spring form, spread evenly over the bottom of the form. Cool in the fridge while preparing the filling.
  • In a small sauce pan cook peaches with sugar for about 25-30 minutes stirring from time to time. Take it off the heat, blend using hand mixer then put it back on the heat.
  • Pour water, stir until combined and cook for about 2 minutes. Add in 2 tbsp agar-agar, stir and let it cook for another 2 minutes (follow the instruction of the packet of agar-agar). divide into two bowls and let it cool.
  • Whisk the heavy cream with powdered sugar to soft peaks. In a small sauce pan heat up milk. Add in 2 tbsp of agar-agar then stir and let it cook for about 2 minutes (follow the instruction of the packet of agar-agar). Take it off the heat and cool.
  • In a large mixing bowl, whip the cream cheese until soft. Pour milk mixture over cream cheese, whip until well combined. Fold the whipped heavy cream into the cream cheese mixture. Using spatula, gently stir to combine.
  • Once combined, pour half into the prepared pan and smooth it over. Spoon the half of peach jam over the cheese mixture and spread it around evenly. Pour the rest of the cheese mixture over the jam then spoon the rest of the peach jam on the top. Spread it evenly.
  • Refrigerate for at least 3 hours.
