Easy, no bake quinoa cake. The crust is made of dates and nuts, which makes it so delicious and healthy. Filling is made of quinoa, desiccated coconut and lemon juice. It’s sweetened with honey.
There are many ways that you can prepare this cake. For example, you can add some melted dark chocolate, or strawberries while preparing the filling. This cake is prefect for quinoa fans and people who are working.
How To Make Quinoa Cake
To make this delicious no bake crust, you will need food processor. Place all the ingredients in a bowl of your food processor and pulse until well combined and sticky mass. Then, transfer the mass into prepared baking pan and spread it evenly over the bottom. Refrigerate until quinoa filling is done. Cook quinoa until soft. Bring to a room temperature. Transfer to a blender or food processor. Add in rest of the ingredients, then blend until smooth consistency. Spread evenly over the crust.

- ½ cup dates
- ⅓ cup hazelnuts
- ⅓ cup almonds
- ½ cup desiccated coconut
- ½ cup quinoa
- 1 ½ tbsp honey
- ½ piece lemon juice
- ⅓ cup desiccated coconut
- chopped hazelnuts
- Pitted dates soak in hot water for 20 minutes then drain. Place dates, hazelnuts, almonds and desiccated coconut in a food processor. Pulse about 1 minute until well combined.
- Put the mass into 18 cm pan, spread evenly over the bottom of the pan. Refrigerate 20 minutes
- Cook 0,5 cup quinoa until soft and fluffy. Bring to a room temperature. Transfer to a food processor or to a tall dish. Add in honey, lemon juice and desiccated coconut. Blend until smooth consistency.
- Spread the mixture evenly over the crust. Refrigerate 1 hour or overnight. Decorate with chopped hazelnuts, almonds and dates.
